TAPAS TODAY</span></em></p>
<p>Who would have thought that a small plate set atop a glass of wine would turn into an international phenomenon? Tapas, the plural of tapa- meaning “cover” -is a custom that began nearly 200 years ago in Spain.</p>
<p>The popularity of tapas spread much farther than Spain. You can find small plates served all around the Mediterranean. In France, theyʼre called hors dʼoeuvres; in Italy, antipasti. In Greece, Turkey, Syria, Lebanon, Israel, and Egypt, the use the word meze; and in Morocco, mukabalatt. Even Venice has its own custom of cicheti, the local equivalent of tapas and meze.</p>
<p>In every Mediterranean country, people love to meet with friends after work for a drink and to unwind, but they wouldnʼt think of imbibing without having a bite to eat. Small plates of food provide light yet satisfying accompaniments to the local drink, be it wine, sherry, pantis, prosecco, ouzo, or raki. Little nibbles stave off hunger, whet the appetite, and bring immediate gratification. This civilized custom allows people time to sit back, relax, and forget the stresses of daily life.</p>
<p>What started as a simple cover has developed into an array of flavourful, healthful, and colourful bites. Join us at Oak Heights to relax and enjoy the Mediterranean charm of tapas.</p>

<p>Our passion has driven us to approach things a little differently. We’ve taken an old dairy farm, where the cows have since gone and planted our grape vines. The first determined souls to grow a winery in the rolling Northumberland hills, where winters are harsh and all the nay-sayers said it couldn’t be done, we’ve done it – we are the little winery that COULD!</p>
<p>So, grab a loved one and come visit us in the beautiful rolling hills of Northumberland County, just minutes from the picturesque village of Warkworth! Wine is always… best enjoyed with friends!</p>

<p>We believe that great wine is made in the vineyard, not in a lab! What we do is provide a gentle hand in the winemaking process, easing the grapes through something they want to do naturally anyway.  Our job is to keep the vineyards protected, to produce the best fruit possible. Then the wine is crafted by our winemaker’s palate – and we like to think that he has a keen taste for and appreciation of great wine.</p>
<p>Visit our tasting bar and try some local wine! Tastings are always complimentary and we are always happy to share our story with you.</p>
